Dual Fuel, All Gas or Induction: Choosing Your Configuration
We build our ranges in all gas, dual fuel and induction configurations because different cooks want different things. Here is how each performs.
All gas
A gas cooktop over a gas oven. The visible flame gives immediate, readable feedback, and our Crescendo burners deliver up to 20,000 BTU alongside the gentlest simmer.
Our all gas ovens pair dual convection with a bake burner to provide perfectly consistent oven temperatures. On the 48-inch all gas Pro range, two dual convection gas ovens sit beneath the cooking surface, the main 30-inch cavity featuring the Nova Broiler system.
Dual fuel
A gas cooktop over an electric oven — the configuration many bakers prefer. You keep the responsiveness and control of a Crescendo flame on the surface, and gain an electric oven that holds temperature within a very tight band.
Our dual fuel ovens offer Dual True Convection, self-cleaning, concealed bake elements, an extra-large cavity, and a temperature range from 80°F to 550°F in 5-degree steps. If you bake bread, pastry or anything where precision matters, this is the configuration we would point you toward.
Induction
Induction generates heat directly in the pan through an electromagnetic field, so the surface itself stays comparatively cool. It is the most responsive of the three and the easiest to clean.
Our Quantum induction technology delivers power and efficiency across cooking zones with warm, warm plus, levels one through nine, boost and auto functions, plus bridge zones that combine elements for a griddle or fish pan. The 48-inch Pro induction range features a seven-inductor cooktop with five zones and a trilaminate griddle.
We build induction across ranges, rangetops and cooktops in every width we offer, to 60 inches. If you have looked at induction before and found the selection thin above 36 inches, look again.
The electrical question, answered properly
This is where most induction conversations stall, so it is worth being direct.
A large induction cooktop normally arrives with a large amperage requirement, and in an older home that can mean a service upgrade — a genuine, four-figure line item that has nothing to do with the appliance itself.
Our induction architecture is engineered to draw less. Wall ovens run on 15-amp circuits, and induction is capped at 20 amps. In a great many homes that means an induction kitchen without touching the panel.
Confirm the specific requirement for your chosen model with your installer during planning — but do not assume induction means an upgrade. Increasingly, with our products, it doesn't.
Enova: induction as a design object
Our Enova cooktops put Quantum Induction under a design-led surface, in 36 and 48 inches, with tactile digital knobs rather than a flat touch panel — physical control, digital precision.
Available in matte black, brushed brass and satin aluminum. If the cooktop is going to sit in the middle of an island where everyone can see it, this is the one to look at.
Hybrid
Our Evoque 60-inch dual fuel hybrid offers both: Crescendo dual-flame burners and induction zones on one surface, with bridge zone mode. For cooks who want a wok on flame and a pan on induction without leaving the range.
Comparing at a glance
| Induction | All Gas | Dual Fuel | |
|---|---|---|---|
| Surface response | Immediate | Immediate | Immediate |
| Oven temperature control | Excellent | Excellent | Excellent |
| Heat into the room | Lowest | Higher | Higher |
| Surface cleaning | Easiest | Grates lift out | Grates lift out |
| Cookware | Magnetic base | Any | Any |
| Electrical | 240V, lower amperage than category norm | Standard supply | 240V circuit |
A note for warm climates
Induction transfers heat into the pan rather than the room, which many owners in warmer regions appreciate through summer. It is worth considering alongside how your kitchen is ventilated and cooled.
Frequently Asked Questions
What is a dual fuel range? A gas cooktop paired with an electric oven, combining flame control on the surface with precise electric oven temperature.
Is induction better than gas? Both cook beautifully. Induction is the most responsive and easiest to clean; gas offers a visible flame and works with any cookware. Our hybrid models offer both.
Will an induction range require an electrical panel upgrade? Often not. Our induction is engineered for lower amperage than is typical in the category — wall ovens on 15 amps and induction capped at 20 — which in many homes avoids a service upgrade entirely. Confirm your specific model with your installer.
What cookware works on induction? Cookware with a magnetic base. If a refrigerator magnet holds firmly to the base, it will work.
How wide do your induction ranges go? To 60 inches, across ranges, rangetops and cooktops.
Can I convert my range from natural gas to propane? Our ranges ship configured for natural gas and are LP convertible. Conversion should be carried out by a qualified installer using the correct kit.
