Most cooktops ask you to choose between power and control, and then ask you to choose where you get it. Our Crescendo burner was engineered so you never have to do either.

The same burner, every position
Look closely at most professional cooktops and you will find a hierarchy: one or two high-output positions, the rest ordinary. It means the surface decides where you sear and where you simmer, and that decision was made by an engineer who has never cooked in your kitchen.
Our Professional ranges carry a Crescendo burner at every position. Move the stockpot wherever it fits. Put the sauté pan where your hand naturally reaches. Cook two high-heat dishes side by side. The layout follows you.
Across the wider range you will find Crescendo positions at 20,000 and 18,000 BTU on natural gas, with rapid burners at 15,000 BTU in some configurations.
Power where you want it
At the peak of its 20,000 BTU capability, meat is seared to produce a crust worthy of your favourite chef. Large pots recover quickly to a rigorous boil.
Control where it matters more
Power is straightforward to engineer. A genuine low simmer is harder.
Our oversized burner cap spreads the flame at low settings so heat arrives gently and evenly rather than concentrating under the centre of the pan. That is what allows the same burner that sears to also melt and temper.
Built to last
Durable brass burner rings provide exceptional heat distribution, and precision flame ports remain corrosion free — for perfect control, easy cleaning and lasting performance.
Above them, heavy-duty continuous cast iron grates are built to withstand searing heat and rapid temperature changes without losing their strength, forming a continuous surface so pans reposition easily.
The part nobody photographs
Beneath the grates sits a one-piece matte-finish porcelain burner bowl. No seams, no joins, no channel where a boil-over disappears and stays.
It is not a feature that sells a range in a showroom. It is the feature owners mention most in year three. Lift the grates, wipe the bowl, done — and the matte finish doesn't show water spots or wear the way a polished surface does.
The griddle option

On our 48-inch ranges and 36-inch griddle configurations, a trilaminate stainless steel griddle with a tubular gas burner runs from 11,500 BTU down to 2,000 BTU — for everything from a hard sear to holding pancakes at temperature.
